It’s Good Friday

It’s Good Friday and past time to think about the menu for Easter Sunday.

 

Mine has been set for a couple of weeks. We are having several friends at our house for Easter Dinner and everyone is bringing a certain part of the dinner with them.

 

One friend is bringing a Smoked Ham from a local place that never fails to provide the best hams in town.

Our son and his wife are bringing the dyed eggs because I told him they would only find white eggs if it was left to me.

Another friend is bringing dessert and I am supplying the sides and drinks.

 

Side Dishes

 

It has been tradition to have Potato Salad with the Ham for Easter as long as I can remember. I will be making 5 lbs of potatoes into salad. Everyone knows to get to the bowl before my son. It’s nothing fancy

  • 5lbs russet potatoes boiled
  • 6 hard boiled eggs chopped
  • 3-5 Tablespoons sweet pickle relish
  • 1-2 stalks celery finely chopped
  • salt to taste
  • enough mayonnaise to hold it all together

There you have it…..Nothing fancy. I won’t be able to eat this part.

 

The rest of the menu will be green beans (I am throwing in some white mushrooms) and carrots. OH…….and, of course, Easter eggs. carrots
