Olive Tapenade Stuffed Chicken

With Valentine’s Day approaching, we are all looking for something to cook for our special someone if we aren’t going to brave the restaurants. Olive Tapenade Stuffed Chicken might be just that special entree you are looking for.




This entree is simple to prepare but tastes like it took hours.


We have Olive Tapenade Stuffed Chicken for that special holiday called Tuesday for dinner quite often. The tapenade is easy to make, just drop everything in your food processor and it does all the work for you.


My husband often asked for this dish just because he likes it.


This is a great special occasion meal entree,{{hint, hint}}.


Olive Tapenade Stuffed Chicken




  • 1/4 Cup large pitted calamata olives

  • 1/4 Cup large garlic stuffed green olives

  • 1/2 Teaspoon capers
  • 1/4 Piece roasted red pepper
  • extra virgin olive oil
  • 2 boneless skinless chicken breasts


In a food processor, combine all the ingredients except the olive oil and chicken. Using the pulse button, process until coarsely chopped and well blended. Continue to process, slowly adding the olive oil.


Use 2 boneless skinless chicken breasts.

Place the chicken on a cutting board and cut a pocket in the side to place the tapenade.

Place 1 – 1 1/2 tbsp of tapenade in the pocket, depending on size (do not overstuff).

Place chicken breasts in a baking dish and drizzle with olive oil

Add a little chicken broth to the bottom of the baking dish to prevent the chicken from drying out.

Cover and bake at 350 degrees for approximately 30 minutes. (Check internal temperature – 160 degrees.)

Serve with a salad. For dessert a nice Chocolate Mocha Mousse and you have a Valentine’s Dinner that is easy to make.
