Simple Quinoa

Many people aren’t familiar with Quinoa (pronounced KEEN-wah). It is a simple grain that has been eaten since the time of the Incas. They called it the “mother grain” it contains more protein than any other grain, and it includes all eight essential amino acids.

Until a few years ago, I had never heard of quinoa nor had I eaten it. The first few times I ate it, I have to admit, I didn’t really like it. It is one of those dishes that has to grow on you.
