Steamed Spring Vegetables

Springtime is the start of the best vegetable season of the year. One of my favorite ways to prepare some of these vegetables is to steam them.

One night we had just a few of a couple of different vegetables in the refrigerator so we decided to see what we could come up with by combining these together.

Here is what we found when we opened the vegetable drawer:

  1. Slice the yellow squash, zucchini, and mushrooms and cut the onions and bell peppers into bite-sized pieces.
  2. Mix them all together and put them into a vegetable steamer and steam them for about 15 – 20 minutes, or until they are as tender as you want them.
  3. Empty the steamed vegetables into a large bowl and season with lemon pepper. This is the only seasoning needed on the vegetables.

We used a steamer and had to cook several different times because the steamer wasn’t that large. I have cooked this dish using a wok with a steamer plate in it and also a pasta pot with a steamer basket.

We have also grilled this same combination of vegetables using a little bit of olive oil.

Using a steamer the lemon pepper can’t be added until after the cooking. If you use another type of steamer such as the pasta pot steamer basket, the lemon pepper can be added while steaming, which makes an entirely different flavor.

Grilling with olive oil and adding the lemon pepper while grilling is completely different also. Grilled olive oil is a smoky flavor that is very complimentary to grilled meats.
